Pour 1 :
Spanish Caribbean XO Rum
(Rum & Cane Merchants, 43% ABV)
Tropical fruits, caramel, orange zest, vanilla, and a clean hit of unsweetened dark molasses.
A limited-edition release with only 2,000 bottles made worldwide (and we're glad we got our hands on it) Rum & Cane Merchants blends extra-aged molasses-based rums from Cuba and the Dominican Republic, matured in American oak ex-bourbon barrels, and bottles the result without shortcuts. Completely natural and non-chill filtered. It arrives in a heavy glass decanter inspired by 18th-century maritime onion bottles, and it drinks with a dry elegance.

RCS RumZcal
(Ron Colón Salvadoreño, 50% ABV)
Wood smoke, cooked agave, rustic funk, and sugarcane sweetness.
The story behind Ron Colón Salvadoreño is one we love. Two friends, Thurman Wise and Pepijn Janssens, spent 22 days travelling 16 countries across Latin America, fell for El Salvador, and built a brand around it. RumZcal is their boldest pour: 66% Salvadoran dark aged rum and 33% Maguey Espadín Mezcal. A hybrid that makes complete sense once it's in your glass.
Pour 3:
RCS Red Banana Oleo
(Ron Colón Salvadoreño, 40.5% ABV)
Fresh tropical banana, caramelised flambé, cacao, and deep molasses funk.
Red Banana Oleo uses Ron Colón's dark aged rum as its base, layering in a low-temperature maceration of dried bananas, an oleo saccharum from fresh banana peels, and local sugarcane syrup. The bananas come from Jags Head Coffee Farms in El Salvador, where red banana trees shade the coffee cherries as they ripen. The whole fruit goes in, peel and all.
